Renowned for their carefully crafted cocktails and Irish coffees, the Dead Rabbit bar in New York have now launched an Irish whiskey. Co-founders Sean Muldoon and Jack McGarry have collaborated with Master Distiller Darryl McNally from Dublin Liberties Distillery to launch a five year old blend to mark the bar’s fifth anniversary. Comprised of both malt and grain, this whiskey was initially matured in ex-Bourbon barrels casks and then finished in virgin oak American casks.
The Dead Rabbit Grocery & Grog in New York City is home to the largest collection of Irish whiskey in North America, so it was only a matter of time before it got its very own Irish whiskey! By teaming up with Darryl McNally, master distiller at The Dublin Liberties, they have created this excellent expression. It’s based around a 5 year old whiskey matured in ex-bourbon barrels, which has then been finished in “half-sized” virgin American oak barrels.

Nose Cedar, toasted brown sugar, apricot-filled pastries.
Palate Caramel and vanilla sit up front, with notes of nutmeg, milky coffee and macadamia developing in the background.
Finish Lingering waxy fruit and a tickle of black pepper.
